As someone who comes from a very land-locked hometown, sushi can be done very badly. When you get excellent sushi done the right way, however, it can be amazing!
One of our favorite restaurants locally has a sushi roll topped with something called schichimi togarashi- a Japanese spice made from pepper- which is then torched with a culinary torch. It creates this amazing smoked flavor.
The best part about this place is sitting at the counter with the sushi guy “Jeff.” Definitely an extrovert. He usually gives those who sit at the counter two salmon nigiri with the smoked schichimi togarashi on top- and it’s phenomenal.
